Squash Me Smoothie Recipe

Here’s a smoothie recipe that’s a bit off the beaten track as far as ingredients are concerned. But if you have picky eaters in your household, it’s a great way to sneak a little magnesium, folate, and fiber into their diets by way of squash. Yep, you heard me right – squash!

Yellow varieties of squash pack huge nutritional benefits. The aforementioned manganese helps boost bone strength as well as promotes the body’s function when it comes to processing fats and carbohydrates.

This smoothie tastes so yummy, it could be used as a breakfast treat (instead of sugary cereal) – just don’t let anybody see what you’re putting into it.

Squash Me Smoothie

  • 1 chopped yellow squash, raw
  • 3.5 tbsp unsalted cashews
  • 1 cup water
  • 1 tsp Canadian maple syrup
  • 1 cup ice
  • ½ cup strawberries
  • 1 tsp cinnamon

Mix all the ingredients EXCEPT for the cinnamon. Once they’ve all been blended into a creamy smoothie, sprinkle the cinnamon on top before serving.
