Mid-Summer Lemon Dream Smoothie

I’ve really been into blueberries lately. Not only are they so deliciously juicy but they are packed with antioxidants and vitamin C. Not only that but they are said to be good for helping to reduce stomach fat and to preserve vision. Lord knows how many of us need help on those two counts!

I’ve also really been into lemons, too. They spruce up a cold glass of water, add a tang to a salad, and – yes – taste delicious when featured in cream pies.

This smoothie I’m about to share with you features both of those favourite things, along with chia seeds.

I’m not sure why but I sometimes neglect to throw a handful of these powerful seeds into my smoothies and sprinkle on my salads. Maybe because they are just so small?

Not sure. But, as a reminder to myself and to you guys, too – they are a fantastic source of vegan protein, have five grams of fiber per serving and deliver a roundhouse kick of energy.

Yup! Will remember these guys.

So without further ado, I present:

Mid-Summer Lemon Dream Smoothie

  • 1 cup frozen blueberries

  • 1 cup unsweetened vanilla almond milk

  • 1.4 cup plain Greek yogurt (I personally love the creamy 5 or 11 per cent stuff)

  • 1 tsp chia seeds

  • 1 tbs shaved coconut

  • 1 banana

  • 1 sqeeze of lemon juice (I prefer fresh lemons but lemon juice will do in a pinch)

  • Handful of ice cubes

Blend and enjoy!

If you want to make the smoothie look recipe look presentable, add some fresh blueberries as well as some lemon zest (use a cheese grater on the skin of the lemon used for this recipe) and add as a topping. Serve in a red wine glass for bonus points.
