Rainy Day Smoothie Recipe

We had a two-day hint of summer and now we’re back to cool temperatures and rain. We can’t complain, though. The trees, the grass, the plants all look so happy to get a good drink.

Speaking of good drinks, just because it feels like the weather gearbox has been thrown in reverse, doesn’t mean we can’t drink a good glass of a summertime drink. This recipe resembles a pina colada – virgin, of course (but this would be a fun party drink with a dash of booze!). Unlike our other healthy smoothies, this one definitely falls under the treat category so save it for a Friday afternoon when you want to reward yourself. It is delicious and we at SeaLuxe headquarters believe that it’s never bad to treat yourself once in a while.

I’ve been on a mango kick lately. Gosh, they are just the best fruits! They have a lot of nutrients, with vitamin C and folate being the ones that really stick out. They’ve been loved for a very, very long time. The sweet fruit originated in Southeast Asia and India, documented in Hindu writings that date back to 4000 BC when Buddhist monks cultivated the fruit. It is even considered to be a sacred fruit as Buddha himself was said to meditate under a mango tree in Shravasti, which was an ancient city in India.

Also interesting – mano belongs to the same family as our favourite nuts - cashew and pistachio.

Rainy Day Smoothie

  • 1 chopped fresh mango (or one cup of frozen mango chunks)

  • 1 ¼ cups of pineapple juice

  • 1 ¼ cups ice

  • 2 tbsp sugar (or honey)

  • ½ heavy cream

  • 1 can coconut milk

Blend and enjoy!
