Peak Pineapple Smoothie Recipe
If you rely on the supermarket for produce, it’s easy to lose touch with growing seasons of fruit and vegetables as most items are available year-round, shipped in from faraway places. Aside from supporting local growers, this is one of the reasons we love making regular trips to the farmer’s market – stuff that’s available is stuff in season!
Speaking of in season, did you know March is the beginning of peak pineapple? That’s right! That delicious prickly-skinned fruit is at its best now through to July. While its origins are in Brazil and Paraguay it was introduced to the U.S. by explorer Christopher Columbus. From there, it was carried to Spain and then to the Philippines. The English also loved it and started growing it in greenhouses during the 1700s. Now, as you know, it’s everywhere.
To celebrate this delicious fruit, we’d like to share one of our favourite pineapple smoothies. It’s fast and easy and even though early spring is a little chilly and wet over here on the West Coast, we feel it's always a good time for a little tropical flavour!
Peak Pineapple Smoothie
- 1 c frozen pineapple
- ½ c ice cubes or frozen ice
- ½ c vanilla yogurt or natural vanilla gelato
- 1 ½ c coconut milk (regular milk is also fine – the coconut gives it that extra tropical punch)
- ½ banana
Blend and enjoy!
