Kale Yes to Pineapple Smoothie

Happy international pineapple day! June 27th the official day to celebrate this favourite fruit, and what better way to celebrate it than by drinking pineapple in a smoothie!

But, first, a little bit of history about the mighty and prickly pineapple. It began with Christopher Columbus, discoverer of exotic fruit and great lands. His crew came across the fruit on the island of Guadeloupe in the Caribbean in 1493. He brought it back to Europe, where the royals fell in love with it. It took a long while – two hundred years – before the perfect growing method was concocted to grow pineapples in greenhouses.

Pineapples were difficult to come by during this time. When a hostess had a pineapple as her table’s centerpiece for a fancy dinner, it apparently spoke volumes about her rank in society. Her guests often felt honoured, as it was a symbol that no expense was spared to ensure their dining experience. Apparently, pineapples are symbols for other things, too! To get a l’il dirty – pineapples are also the international sign for swingers! From placing a pineapple upside down in your grocery cart at the store (“I’m interested!”), to finding one on your front porch (“Hey, the pervy neighbor is interested!”) – pineapple, I suppose one could say, is a fruit that says 1000 words.

Kale Yes to Pineapple Smoothie

  • ¼ cup frozen or fresh pineapple slices
  • ½ cup Greek yogurt (we like 2%)
  • ¾ unsweetened vanilla almond or coconut milk
  • 2 cups of chopped kale leaves with the stems removed
  • 1 frozen or fresh banana
  • 1.5 tbsp almond or peanut butter
  • 2 tsp local honey
  • (optional – if you use fresh fruit instead of frozen, add a handful of ice cubes)

Blend and enjoy!
