Ginger Spice Smoothie Recipe
While the calendar winds down on summer, it certainly does not feel like it as the temperature here on the West Coast still makes it feel like the dead of summer.
But school starts next week and, with it, schedules get hectic again. This combined with the heat makes one not want to spend a whole lot of time in the kitchen quite yet (I’ll wait another month or so before I slave over a hot stove, thank-you very much!).
So I’d like to share a smoothie recipe that not only offers a lot of nutritional goodness in the way of spices to strengthen the immune system, a healthy dose of vitamins, minerals and proteins by way of sunflower seeds and greens, but also serves as a great meal replacement to grab as you head out the door as we ramp up going into fall.
Ginger Spice Smoothie
3 cups coconut water
1 handful of baby spinach or baby kale
1 orange (minus peel and seeds)
¼ cup sunflower seeds (unsalted)
1/3 tumeric root (or powder)
1 small square fresh ginger root
1 pinch black pepper
2 or 3 pitted dates (just for sweetener)
Blend and enjoy!
