Homemade Bailey’s on Christmas Morning (Recipe included)

Our production specialist, Hanna, is a whiz not only in our Sealuxe kitchen but in her own as well! She owns the traveling food company TukTukEats (On Instagram, too!), so we certainly trust her with any and all recipes, as well as her go-to restaurants.“I’ve been making this for the past few years every Christmas Eve to enjoy Christmas morning with our coffee!” - Hanna

How to Make Homemade Baileys

Makes about 3 cups (depending on how much alcohol is added)

Ingredients:

  • 1 1/4 cup heavy cream or half & half 300ml can of sweet and condensed milk (less if you want it less sweet)

  • 3 tablespoons chocolate syrup

  • 1 teaspoon fine instant coffee (optional)

  • 2 teaspoons pure vanilla extract (or 1/2 vanilla bean pod)

  • 1 ¾ cups Irish whiskey (or a blended whiskey)

  • 1 1/2 teaspoon cinnamon

  • 1/4 teaspoon of freshly grated nutmeg

  • ¼ teaspoon of cloves

  • Tiny pinch of salt

Instructions:

Whisk everything together (do not over agitate). Adjust to taste. Will keep in the fridge for up to 3 weeks depending on expiry of cream. Best served over a little ice or in coffee ☕️

SPENDING TIME WITH FAMILY & SNOWSHOEING

“Christmas Eve is when I capture the spirit of the thing (gifting myself the Slapshot reference there). I work right up to the last minute before it hits – holy crap! Christmas is only hours away! So my goal is to make it last, that is before the chaos of Christmas Day hits.

When early evening falls on Christmas Eve, we head to the hills for a bit of traditional cross-country skiing. Cypress Mountain has lovely trails through the forest, when the snow is falling around the trail lights I half expect to see Tumnus the Fawn try to lure me to his house (gifting myself the Narnian reference there). Skiing ends with fondue and hot chocolate at the mountain’s cozy Hollyburn Lodge. Back at home, the night ends with one round of Charlie Brown’s Christmas and the lovingly creepy Polar Express.” - Rebecca Dixon, writer

CHRISTMAS WELSH CAKES (Recipe Linked)

“Every year, my family and I make welsh cakes after opening presents on Christmas morning! Imagine combining a scone and pancake in one, cooking it on the griddle, and you can top with sugar, jam or butter! They may not look like anything special, but I probably eat 20 every Christmas. They are incredibly easy to make, and they’re great if you love making Christmas cookies but feel sick after eating one! We always follow a secret family recipe, so I found a similar one online for you to make! Prep time is 10 minutes and you can griddle them quickly for an easy Christmas treat.” - Celia Jardine, Director of Sales & Marketing
