Zucchini Blueberry Smoothie Recipe

The whole point of a smoothie is having something both easy and nutritious to get in the belly. We do like smoothies that taste great, too, which is why we avoided adding  zucchini until recently.

The thought of adding raw squash admittedly made us cringe until we checked out a recipe that called for it. Well, here it goes… we thought with not a lot of optimism. But we were so pleasantly surprised and now add zucchini regularly to our shakes because of the zucchini’s excellent marks when it comes to vitamins (chock full of  vitamin A, B and C) as well as fibre, folate, magnesium and antioxidants.

The trick is to throw fruit into the shake to mask any raw zucchini flavour (admittedly, they don’t have a heck of a lot of taste). Here's our own recipe:

 

Zucc-Blue Smoothie

 

  • ½ c zucchini
  • ½ c spinach
  • ½ c frozen blueberries
  • 1 tsp honey (for sweetness)
  • 1 tsp chia seeds
  • 1 tbs raw almond butter
  • 1 c milk (cow or almond)

On another note, zucchini is also said to great for men suffering from Benign Prostatic Hupertrophy (where the prostate gland becomes enlarged). Zucchini and other foods that contain phytonutrients are said to be great for decreasing BPH symptoms.
