Watermelon Refresh Smoothie

I’ve been eating a lot of watermelon lately. It’s mostly because I was at a friend’s cottage and there was always slices of watermelon on a plate in the kitchen so it was easy to grab and munch on passing through. I remember eating watermelon when I was a kid, being careful to pick out all the seeds. These days, though, I’m a savage and just eat them along with the refreshing deliciousness of the fruit.

It got me thinking about watermelon smoothies, so I came up with one. Don’t be fooled by its high water content – watermelon has loads of nutrients including vitamins C, A, B1, B5, as well as potassium and magnesium. It also contains antioxidant lycopene which may help lower inflammation and oxidative damage. Watermelon blended with cherries has become my latest favourite (I also keep some of the leftovers to have as a bedtime treat. Cherries contain melatonin which, of course, helps with sleeplessness.). I also threw in a squash to thicken things up, but you could also use cauliflower (if you missed our post on this nutritious yet tasteless addition to thickening shakes, head over to it right here).

Watermelon Refresh Smoothie

  • 2 cups yellow squash or cauliflower
  • 3 cups watermelon
  • 3 cups pitted cherries
  • 1 chopped apple
  • ½ cold water
  • 1 cup of ice
  • Tsp hemp seeds

Blend and enjoy!
