Awesome Apricot Smoothie Recipe
Since we’re at the tail-end of BC’s apricot harvest season, we thought it would be great to celebrate this fruit in smoothie form.
The awesome apricot is a relative of the peach and is a great source of Vitamin A, which is wonderful for eye health. Did you know apricot trees will produce fruit for 20 years on average? That is one hard-working tree! Did you know apricot trees are on every continent except Antarctica?! It gets around!
Like the avocado, refrigerating apricots will slow the ripening process. Leave them out at room temperature until they are ripe, and then refrigerate them. That will give you an extra couple of days to use them. Especially for this wonderful smoothie recipe.
Awesome Apricot Smoothie
- 3-4 fresh apricots.
- ½ c cherries (fresh and pitted if at all possible)
- 1 c cold water
- 1 few fresh basil leaves
Blend and enjoy!
